Bacon Wrapped Jalapeno Poppers

Bacon Wrapped Jalapeno Poppers

Let me tell you a story. Bacon wrapped jalapeno poppers recipeA couple years ago Shane bought about a dozen fresh jalapenos, a block of cream cheese, some bacon, and a box of kitchen gloves. He told me about all these things EXCEPT the box of gloves and asked me to make some jalapeno poppers.

So one afternoon I pulled out the three ingredients I needed and started cutting the jalapenos in half, scooping their seeds out. Now, I know I need to be careful with jalapenos. So after I was done I washed my hands. I washed them twice actually.

This was a couple years ago so I can’t remember why I would do this but at one point my hands rubbed my eyes. MY WORD. I thought my eyes were going to burn off.

I am standing over the bathroom sink washing my hands and my face over and over again with dish soap. At the time William was about two years old. I remember him running back and forth to get me clean wash cloths as I needed them. I couldn’t open my eyes and kept thinking “I am going to go blind because of these stupid jalapenos.”

Thankfully, I didn’t go blind. The burning stopped a couple hours later and when Shane came home he then informed me of the gloves he had bought. Moral of the story: when you make these delicious jalapeno poppers (which you must make), please, wear gloves.

  1. I should make these, Matt loves jalapeno poppers. I’ll have to substitute turkey bacon for him though. OH! And a side note on the burning eyes, (because I’ve done that), a Hispanic person told me that if you do get it in your eye to rub your hair in your eye and it will go away. I haven’t tried it but I have remembered it! Like the new look of your site too!

    1. That’s a great tip! I will remember that for next time! Thanks! You’re the first one to mention the look of the site. I am still working on it a bit but I like the look, too!

  2. I’ll admit it- I make these for dinner and can throw down. 🙂

I’ve recently started a variation of these that I love just as much but they’re a bit easier to assemble. I use poblano peppers, cut in half and seeds removed, spread them with cream cheese and top with whatever leftover meat I have on hand… chicken, ground beef or roast and bake them. Super yummy!
