But actually pulling all my stuff out to a table in the driveway and trying to sell it- hate that. And it’s not just all the work involved that I hate. It’s more the awkwardness of people looking at my stuff and deciding if they will buy it or not. Thinking of a price and wondering if that’s fair or not. The LONG spaces between customers where I am just sitting out there. Okay, I think you get the point. I hated yard sales.

I live in the North- aboutSummer reading list 3,000 miles from my family. We don’t get to visit very often, and same goes for them- they don’t get up here as often as they’d like. But when they are here they make the most of their time with us.

I remember when my sister came in 2012 my son was just 18 months old. She read to him at least twice a day. She wanted to be the one to put him to bed and when she did she was always in there for at least a half hour reading to him. When she left at the end of that visit she told me I better keep reading to him! And that has always stuck with me.

My Favorite Kitchen Appliance + French Toast Recipe

My oven is so uneven. Is that a common issue? The burners set too deep into one side of each burner and it makes for some interesting meals. Pancakes, grilled cheese, eggs, etc. Everything tilts to the left. Anything that needs to cook evenly in a frying pan pretty much cooks on one side. It’s really annoying.

So when Shane was headed south for a shopping trip a couple months ago I asked him to look for an electric griddle   for me. What he returned with quickly became my FAVORITE kitchen appliance. I cannot say enough good things about the Hamilton Beach 38546 3-in-1 Grill/Griddle .

We have several allergies in our family so we need to keep foods separate to prevent cross contamination. This thing makes that so easy!

Because it has two separate pans (that remove so easily for cleaning!) I can have the gluten free grilled cheese cooking on one side with the gluten on the other. Or I can have the egg free french toast on one side and the regular french toast on the other side. So easy.

I also love cooking burgers on this. The pans are reversible so I flip them for the grilling side. I buy the frozen burgers and just throw them on as is. They cook evenly, quickly, grease drips down to the drip tray and also leaves those pretty black lines that somehow make burgers taste better 🙂

Did I mention I cannot say enough good things about this tool?

Cause I can’t.

I know I already brought up how easy it is to clean but it’s worth bringing up again. Just unclip the trays after they’ve cooled down and wash them with soap and water. That’s it. No scrubbing. No soaking. Just wash, dry and put away. Easiest clean up ever.

And while we are talking about how awesome this Hamilton Beach 38546 3-in-1 Grill/Griddle is, why don’t I share my easy french toast recipe with you! You can go grab yourself one of these griddles  and make some yum french toast on one side and some sausage on the other.

Easy French Toast

Ingredients

  • 6 slices of bread
  • 2 eggs
  • 1 cup milk
  • 1 tsp vanilla
  • couple dashes of cinnamon

Directions

  • set your pan to medium heat (400 degrees if you are using the electric griddle)
  • mix together the eggs, milk, vanilla and cinnamon. Mix well.
  • dip your bread in the milk mixture, flipping so both sides are coated
  • spray your pan with cooking spray
  • place soaked bread on the hot pan, flipping after 1-2 minutes (how ever long it takes for each side to be light brown)
  • Enjoy with some syrup and powdered sugar!

Baker’s Notes

  • Use gluten free bread to easily make this a gluten free breakfast!
  • Replace the eggs with half a cup of pumpkin puree for an egg free alternative.

My 6 year old melted me yesterday.Honey Themed Melted me “like a popsicle on the fourth of July.”

I guess his Sunday School teacher told him that next week is Mother’s Day. All afternoon he kept telling me how he was so excited for Mother’s Day. He kept counting down the days on the calendar to make sure he knew how many more days until Mother’s Day.
